A popular South Indian snack made using skinned coarsely ground split bengal gram i.e chana dal and a mixture of spices to make these crispy and flavorful vadai. Shanthi Seshadari demonstrated making these absolutely flavorful, delicious and crispy masala vada from scratch at What’s Up Chef. Her recipe shared below:

Ingredients of Masala Vada:
200 grams of Channa Dal
3 pieces of cinnamon sticks
4 curry leaves
1 tsp of Fennel seeds
1 tbsp of oil
1 small onion (fine chopped)
4 red chilies
Salt to taste
Method:
- Soak Channa Dal for two hours.
- Blend cinnamon sticks, red chilies, and channa dal coarsely. Then add the remaining ingredients.
- Add Besan (Gram flour) in case the mixture is not binding (optional)
- Make flat dumplings out of the mixture and deep fry with medium heat until they turn golden and crispy.
- Enjoy your snack.
