Anjali Agarwal was one of the chefs at Indoindians 3rd What’s Up Chef event. She demonstrated making spinach muthia – a healthy take on the traditional lauki muthia.

Spinach Muthia Recipe

Ingredients:

1 Cup                    Wheat flour

¼ Cup                   Gram Flour

30gr                      Oil for dough

2tsp                      Ginger Paste

2tsp                      Garlic paste

2tsp                      Green Chili paste

¼ Cup                   Sour Curd

2tsp                      Jaggery

1tsp                      table Salt

½tsp                      Red Chili

½tsp                      Cumin powder

½ tsp                     Coriander powder

¼tsp                      Turmeric

1 Pinch                 Asafoetida powder

1 tsp                    Dry coriander green leaves

2tsp                      Fenugreek leaves

1 cup                   Spinach leaves

Method:

  1. Make a dough mixing all these ingredients.
  2. Knead the dough with the help of hot water
  3. Make sure the dough is thick
  4. Shape the dough in your palm
  5. Steam it for 30mins
  6. Cool it
  7. Shallow fry with coriander leaves
