Malai Cauliflower

Similar to potatoes, cauliflower is the perfect vegetable for any dish rich in spices because it’s flavor is quite bland. This North Indian recipe is therefore the perfect dish for any vegetarian or vegan. Ideally, it is paired with cooked rice, pulao or hot chapattis which makes it a perfect lunch or dinner recipe. Serve this dish on special occasions like parties, buffets or potlucks and enjoy it with your loved ones!

Cooking time: 30 min.

Serves: 6

Ingredients :

  • 750 gm cauliflower
  • 4 tbsp ghee/oil
  • 3 tbsp powdered milk
  • 2 pinches sugar (optional)

For the paste :

  • 1 1/2 onions
  • 12mm (1/2”) ginger
  • 4-5 green chillies

For the garam masala:

  • 12mm (1/2”) cinnamon
  • 2 cardamoms
  • 1 clove

Directions:

  1. Boil cauliflower florettes in salted water till cooked but should remain firm.
  2. Make a paste of milk in 3/4th cup of water.
  3. Fry the cauliflower in 2 tbsp. oil.
  4. Add the paste and garam masala and fry till oil comes on top. Add the milk paste and cook till mixture looks like crumbled paneer. Add the cauliflower and 1 cup water and simmer for 5 min. till gravy thickens. If desired, add sugar.
