Orange Coffee Cake brings together two wonderfully complementary flavours. Try it in this tried and tested recipe from Meera Josephs’s kitchen.
Ingredients
150 grams all-purpose flour
150 grams caster sugar
1 teaspoon salt
2 ¼ teaspoons baking soda
150 grams butter
2 large eggs
2 teaspoons instant coffee powder
1 teaspoon ground cinnamon
50 grams plain chocolate (grate the choc)
1 orange(rind & 3 tablespoons juice for cake)
1 orange(rind & juice for topping)
Method
- Preheat the oven to 325°F/170°C
- Cream butter and sugar until light and fluffy
- Add eggs one at a time and beat well
- Grate orange and add to the above mixture
- Mix 3 tbsp orange juice and coffee powder
- Sieve well flour, salt, baking powder and cinnamon
- Add to the above mixture, alternating with flour and orange-coffee juice
- Fold in the grated chocolate
- Bake in a greased and floured fluted pan for about 45 minutes
Orange sauce topping
1 cup fresh orange juice
1 orange zest/rind
1 tablespoon butter
- Stir and beat all ingredients and pour over cake
