A taste of a tropical beach with these paleo popsicles. These homemade pops use rich coconut milk combined perfectly with the sweetness of mangoes. You can also double this as a frozen breakfast!
Ingredients:
- 400 ml full-fat coconut milk, refrigerated to separate cream from water
- 1 large mango, peeled and chopped- 2 tablespoon honey
- ¼ cup unsweetened coconut flakes
Instructions:
- Strain out the water layer from coconut milk can. Set aside.
- Combine coconut milk, honey, and coconut flakes in a bowl.
- Layer coconut mixture and mango in Popsicle molds. Freeze until solid (around 4-6 hours)
