During the colder weather of Indonesia, soups are the best meals to eat. It can be eaten warm to bring comfort to the body and is especially delicious if a family member is feeling unwell. These soups mentioned below are also easy to prepare in a pot for the whole family.

Here are easy soups to prepare for hearty family one-pot meals:

Wonton Noodle soup

Stir fry in a saucepan for 20 secs

  • 1 clove crushed garlic
  • 1 tsp chopped ginger
  • 1/2 tsp sesame oil

Add

  • 2 lts of chicken stock
  • 1 tbsp light soy sauce

Bring to boil, and then simmer for 5 mins. Then add

  • 3 stalks of chopped spring onions
  • 20 shrimp wontons
  • 420 gm rinsed, boiled noodles

Cook for further 5 minutes. Serve

 

Chicken and Vegetable Soup

Stir fry in a deep pan

  • 1 tbsp oil
  • 1 tsp chopped garlic
  • 1 tsp chopped onion

and then add

  • 4 chopped carrots
  • 4 chopped sticks of celery

after 2 minutes add

  • 1.5 kg skinned whole chicken
  • 2 lts of water
  • 2 vegetable stock cubes

Bring to boil and then simmer for 1 1/2 hrs. Remove chicken from pan and cool.

To the pan add

  • 2 cups of spiral pasta
  • 2 cups fragrant rice

Simmer unconvered for 10 – 15 minutes till rice and pasta are done.
Remove meat from chicken and shred. Add this to the pan with 2 tbspn of chopped parsley. Serve hot.

 

Chicken and Sweet Corn Soup

Heat and bring to boil in a pot

  • 1 lt clear chicken broth
  • 2 tsp minced ginger

Add

  • 2 cups shredded chicken
  • 1 can of creamed corn
  • 1 can of corn kernels
  • 3 stalks of sliced spring onions
  • 2 tsp of sesame oil

Simmer for 5 minutes
Whisk 1 egg and pour into soup, stirring to form strands.
Serve topped with spring onions.

 

Pumpkin, Lentil and Bacon Soup

Cook 3 chopped, rindless bacon in frying pan till crisp and drain. In the pan, fry for 2 minutes

  • 1tbsp oil
  • 1 chopped onion

and then add

  • 3 cups vegetable stock
  • 300 gms seeded and cubed pumpkin
  • 1/2 cup lentils
  • 1/2 of the cooked bacon

Simmer for 15 minutes. Process soup with a hand blender till smooth when cool.

Reheat, season with salt and pepper, and serve with rest of bacon.
